  • 1 each pie crust
  • 1/4 cup butter or margarine
  • 3 ounces unsweetened baking chocolate
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 3 each eggs
  • 1 teaspoon vanilla
  • 1 cup heavy whipping cream
  • whipped cream
  • slice almonds if desired

Step 1

MELT margarine and chocolate in 2 quart saucepan over low heat, stirring occasionally. Remove from heat. Mix sugar and cornstarch; stir into chocolate mixture.

BEAT eggs in small bowl with electric mixer on medium speed until thick and lemon colored; stir into chocolate mixture. Cook chocolate mixture over medium heat for 5 minutes; stirring constantly, until thick and glossy. Stir in vanilla. Cool 10 minutes, stirring occasionally.

BEAT whipping cream in chilled medium bowl with electric mixer on high speed until stiff. Fold chocolate mixture into whipped cream. Spread into pie crust. Cover and freeze for 4 hours or until firm. Top with whipped cream and sprinkle with almonds if desired. Immediately cover and freeze any remaining pie.
