Ingredients

  • 1 cup long or medium-grain brown rice
  • 2 cups chicken broth (water, juice or wine)
  • 1 tsp. dried mixed herbs

Preparation

Step 1

Place all ingredients in pressure cooker, bring to high pressure and cook for 20 minutes. Quick-cool under cold water and test for doneness. If rice is still hard, add more liquid if necessary and bring back up to high pressure for another 5 minutes. When done, cover cooker and let rice sit for 5 minutes to finish cooking. Season to taste, fluff with fork and serve.


Variations

Quick and easy White Rice Pilaf – Substitute white rice for brown (white rice is not as variable in cooking times as brown). Add 3 T. chopped parsley, ½ cup each frozen peas and carrots and 2 T. chopped onion. Follow directions above but cook for only 7 minutes before testing for doneness.

Nutty Wild Rice Pilaf – Substitute ½ cup of wild rice for half of the brown rice. Add 1/8 tsp. black pepper, 2 T. chopped, slivered almonds and ¼ cup dried cranberries.

Mushroom Pilaf – Substitute ½ cup dry white wine for ½ cup of the water and Italian Seasoning for mixed herbs. Add 1 cup chopped mushrooms and 2 T. snipped sun-dried tomatoes.
