Ingredients
- In a small bowl whisk together:
- 1 pkg. (9 oz.)fresh cheese tortellini (tri colored is the prettiest)
- 2 small zucchini, sliced
- 2 small tomatoes, or cherry, sliced in 1/2
- 1 can - 7 oz. artichoke hearts, drained and chopped
- 1 can - 3.5 oz. sliced black olives, drained
- 1 lb. shrimp, cooked, peeled and devained
- 1/2 cup chopped fresh basil leaves
- Italian Herb Dressing (recipe follows)
- Grated Parmesan cheese
- Italian Herb Dressing
- 3/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 clove minced garlic
- 1/4 t. dried tarragon leaves
- salt and pepper to taste
Preparation
Step 1
Cook tortellini as directed on package. Drain. In a large bowl gently toss all ingredients including dressing. Chill before serving. Serve with parmesan cheese. ***You can substitute cooked chicken for shrimp. Use any vegetable that you want - the more colorful the better.
