Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 cup firmly paacked light brown sugar
  • 1 large egg
  • 1 cup vegetable oil
  • 1 cup rolled oats
  • 1 cup crushed corn flakes
  • 1/2 cup shredded coconut
  • 1/2 cup chopped almonds
  • 3 1/2 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract

Preparation

Step 1

1. Preheat oven to 325 degrees F. Line two or three baking sheets with parchment paper; set aside.

2. In a large bowl and using an electirc mixer at medium-high speed, cream the butter, sugar, and brown sugar until light and fluffy. In a medium bowl, whisk together the egg and oil unti combined. Add oil mixture to butter mixture, and beat on low speed until well combined. Add the oats, cornflakes, coconut, and almonds, and beat until mixture is well blended.

3. Reduce mixer speed to low, and beat in flour, baking soda, salt, and vanilla extract. Drop by spoonfuls onto prepared baking sheets. Bake 8 to 12 minutes, or until golden brown. Cool for 10 minutes, then transfer to a wire rack to cool completely. As soon as you take them out of the oven place a pecan half on each one for a pretty garnish.
