Ham Minestrone

Ingredients
- 2 medium onions, peeled and finely chopped
- 2 garlic cloves, minced
- 3 sticks celery, cut into 1 cm dice
- 2 carrots, peeled and cut into 1 cm dice
- 400 g can chopped tomatoes
- 794 ml / 28 fl oz chicken stock
- 57 g / 2 oz dried pasta shapes
- 400 g can cannellini beans, drained
- 198 g / 7 oz lean ham, cut into small pieces
- 4 tbsp chopped flat-leaf parsley

Preparation
Step 1
Place a large saucepan over medium heat and add all vegetables and the stock. Bring to the boil, reduce heat to a simmer, and cook for 15-20 minutes.
Stir in the pasta, beans and ham. Add a bit of extra water if too thick. Cook for 8-10 minutes or until pasta is just tender.
Stir in parsley, season well and remove from the heat. Served topped with with low-fat cheese or non-fat cottage cheese (optional).
