Ingredients
- 8 chicken breast halves, boned & skinned
- olive oil
- flour
- 1-1/2 TBL fresh lemon juice
- 2 TBL capers
- 6 TBL butter
- 1-1/4 C white wine
- S & P to taste
- 1/3 C chicken broth
- 1/4 C chopped italian parsley

Preparation
Step 1
flatten chicken breasts by pounding
heat oil in lg. saute pan
lightly flour chicken breast & saute in oil until done - abt 4 min on each side
keeping chicken breasts in pan, add wine & cook on high heat for approximately 1 min
add lemon juice, butter, chicken broth, S & P and capers
continue cooking over low heat until sauce is reduced by half
remove chicken from pan & arrange on lg. platter
heat sauce a bit more, then pour over chicken
sprinkle fresh parsley on top
