Avocado and Tomato Salad with Bocconcini

A beautifully balanced salad that is simply delicious!

Ingredients
- 2 avocados (ripe but not too soft)
- 1 head butter lettuce
- 3 Roma tomatoes, sliced
- 1/4 English cucumber, sliced
- 2 Tbsp. red onion, thinly sliced and chopped
- 2 Tbsp. fresh cilantro, chopped
- 1 tsp. lime juice
- 12 slices Bocconcini (if you don't have Bocconcini, 1/2 cup crumbled feta would work nicely)
- 3 Tbsp. olive oil
- 3 Tbsp. Balsamic vinegar
- 2 tsp. liquid honey
- salt and pepper

Preparation
Step 1
Chop the avocado into cubes and toss with lime juice. Lay butter lettuce leaves on bottom of serving platter. Top with layers of sliced tomato, cucumber and avocado. Place the Bocconcini slices evenly across the top then sprinkle the red onion and cilantro over all.
Whisk the olive oil, Balsamic vinegar, honey and salt and pepper together. Drizzle over the top of the salad just before serving. Enjoy!
