Ingredients

  • 2 c. chopped onion
  • 8 stalks celery, chopped
  • 4 carrots, diced
  • 1 c. butter
  • 1/4 c. + 2 T. flour
  • 2 T. curry powder
  • 16 cups chicken broth
  • 2 apples, cored, peeled, chopped
  • 1 c. white rice
  • 4 skinless, boneless chicken breast, cubed
  • salt and pepper to taste
  • 4 pinches dried thyme
  • 2 c. heavy cream heated

Preparation

Step 1

Saute onions, celery, carrots and butter in a large soup pot. Add flour and curry, and cook 5 more minutes. Add chicken stock, mix well, and bring to a boil. Simmer about 1/2 hour. Add apple, rice, chicken, salt, pepper, and thyme. Sinner 15-20 minutes, or until rice is done. When serving, add hot cream.
