Ingredients

  • 1 cup cornstarch
  • 1/2 cup sugar
  • 1 tsp. baking powder
  • 3/4 cup butter
  • 3 eggs, beaten
  • 1 tsp. lemon rind

Preparation

Step 1

1. Preheat oven to 350 degrees F.

2. Mix cornstarch, sugar and baking powder in bowl. Cut in butter until mixture is like coarse meal. Mix in the beaten eggs and lemon rind.

3. Drop by tablespoonsful in the bottom of greased muffin pans. Bake for 10-12 minutes.
