Ingredients
- 2/3 c flour
- 2 LBS boneless pork loin, cut into 1" pieces
- 4 TBL olive oil, divided
- 1 lg. onion chopped
- 5 garlic cloves, crushed
- 1 can (28oz) diced tomatoes, undrained
- 1 C dry red wine or beef broth
- 3 bay leaves
- 1 cinnamon stick (3")
- 1 TBL tomato paste
- 1 TBL red wine vinegar
- 1 tsp anchovy paste
- 1 tsp each: dried oregano, basil & sage leaves
- 1/2 tsp salt
- 1/2 tsp crushed red pepper flakes
- 1/4 tsp pepper
- 1/4 tsp minced fresh parsley
- hot cooked bow tie pasta
- grated parmesan cheese

Preparation
Step 1
place flour in lg. resealable plastic bag
add pork, a few pieces at a time
shake to coat
in dutch oven, brown pork in 3 TBL oil in batches
remove & keep warm
in same pan, saute onion in remaining oil until tender
add garlic, cook 1 min. longer
add tomatoes, wine, bay leaves, cinnamon, tomato paste, vinegar, anchovy, herbs, salt, pepper flakes, pepper & pork
bring to boil
reduce heat
cover & simmer for 1-1/2 hrs,
stirring occasionally
stir in parsley
cover & cook 30-60 min longer or until meat is tender
skim fat
discard bay leaves & cinnamon
serve w/ pasta
sprinkle w/ cheese
