Hot Nutty Game Hens
From Pressure Cooking the Easy Way
Author notes...This is an unexpected way to serve game hens. Pressure-cooking whole birds makes them so tender that the meat literally falls off the bone. To avoid this, tie the legs to the bird with string or cheesecloth strips. If you prefer a mild, more basic dish, omit chili powder, ginger, curry powder and nuts.

- 3 Cornish game hens
- 1 onion, sliced
- 1 clove garlic, crushed
- 1 1/2 cups chicken broth
- 1 tsp. chili powder
- 1 tsp. ground ginger
- 1 T. curry powder
- 3 T. yogurt
- 1/4 cup cashew nuts

Step 1
Coat cooker with nonstick spray and brown hens, onion and garlic. Remove hens and tie legs or wrap in cheesecloth. Return wrapped hens to cooker and add broth, chili powder, ginger and curry powder. Bring to high pressure, cook for 8 minutes, and reduce pressure quickly under cold water. Remove and unwrap hens. Boil to reduce cooking liquid by one third, remove from heat. Stir in yogurt and nuts just before serving.
