Ingredients
- Dried pineapple rings on top of the chicken give this dish a tropical flavor
- 4 half chicken breasts
- 1 1/2 cups dry sherry
- 8 dehydrated pineapple rings
- 1 T. minced garlic (about 6 cloves)
- 1 T. minced fresh ginger root
- 1 T. soy sauce
- 1 T. sesame seeds
- 2 T. cornstarch dissolved in 1/4 cup water

Step 1
Combine all ingredients except cornstarch mixture in pan and cook under high pressure for 10 minutes. Quickly reduce the pressure. Remove chicken and pineapple and add cornstarch mixture. Heat sauce until thickened. Pour over chicken, top with pineapple slices, and serve with rice.
