Ingredients
- 8 slices bacon
- 1 cup diced yellow onion
- 2/3 cup flour
- 6 cups chicken broth
- 4 cups diced peeled potatoes
- 2 cups heavy cream
- 1/4 cup parsley
- 1 1/2 garlic
- 1 1/2 tsp basil
- 1 1/2 tsp salt
- 1 1/2 tsp pepper
- 1 cup cheddar cheese

Preparation
Step 1
Fry bacon. Save grease.
Cook onions in grease.
Add flour and whisk. Cook 4 minutes.
Add chicken broth slowly whisking.
Reduce to simmer.
Add potatoes, cream, bacon, garlic, basil, salt and pepper.
Simmer 10 min. DO NOT BOIL.
Add cheese until melted or sprinkle on top of soup.
