Ingredients
- 1/4 cup salad oil
- 1 bunch scallions, chopped
- 3 cups minute rice
- 1 green pepper, sliced
- 2 cups chicken broth
- 1-4 oz. can mushrooms
- 1-5oz. can water chestnuts, sliced
- 1/4 cup soy sauce
- 1-16 oz package frozen peas
- 4 eggs, scrambled

Step 1
Heat oil in a large heavy skillet. cook scallions, rice and green pepper 5 minutes, stirring occasionally. Add broth, mushrooms, water chestnuts and soy sauce. Cover and simmer about 15 minutes. Add frozen peas and cook 5 minutes. Add frozen peas and cook 5 minutes. Rice should be moist. Add liquid if necessary. Variation: 2 cups chicken, shrimp or pork may be added for a main dish. Amount: 8 to 12 servings.
