Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 -2 teaspoon cinnamon(optional)
  • 1 1/2 cup buttermilk
  • 1/2 cup milk
  • 3/4 cup vegetable oil
  • 2 eggs, separated
  • 2 tablespoons sugar
  • 1 teaspoon vanilla

Preparation

Step 1

Heat waffle iron
In a large mix flour, cornstarch, salt, baking powder, baking soda and cinnamon. Set aside.
In a medium bowl combine buttermilk, milk, vegetable oil and egg yolks. Set aside.
In a separate medium bowl using an electric mixer, beat egg whites until soft peaks form. Add sugar and vanilla. Continue beating until stiff peaks form.
Pour buttermilk mixture into dry ingredients whisking until just mixed. Fold in egg whites until just combined.
Pour batter onto preheated waffle iron, cooking to desired crispness.
