Ingredients
- 2 oz. chicken breast, diced
- 1/2 cup low-fat natural yogurt
- 1 teaspoon olive oil
- 1 cup canned asparagus, drained
- 1 1/2 cup onion, diced
- 1/2 - 1 cup chicken stock (adjust to desired consistency)
- salt, pepper & other seasonings to taste (I use Mrs. Dash)

Preparation
Step 1
Saute onion in 1/2 of the olive oil until soft and transparent. Allow onion to cool slightly then place in food processor with asparagus, yogurt, and chicken stock and blend until almost smooth.
Add remaining olive oil to saucepan and saute chicken until lightly browned. Add asparagus mixture and gently simmer for 5 minutes, stirring occasionally and taking care not to let boil. Season as desired.
