Ingredients

  • 1 cup cake flour (or plain flour)
  • 1/4 cup caster sugar
  • 1/2 tsp mixed spice or cinnamon
  • 1 tsp baking soda
  • 55 g cold butter cut into small pieces
  • 1/3 cup raisins
  • 6 toffee lollies chopped into small pieces
  • 2 tbsp of whisky
  • 1/2 egg beaten
  • 2 tbsp cold milk (more if needed)

Step 1

In a bowl combined all your dry ingridents. Next, like you would for scones rub your cold butter into the flour until you have fine sand (tip* this should be done quickly as the butter should stay cold). When you have your sand mix in your egg and milk, once combind tip out onto a floured surface and with a bit more flour softly nead until it just stops sticking. Roll out to about 2 inches in thickness.

Prepare a fry pan with a healthy amount of butter ( and by healthy I mean a shit load..) and in batches of 4 fry for 3 minutes on the first aide and then 2 on the other. Temp should be mid to low heat.

When cooked cool for 20 minutes dust with icing sugar and serve with a dollop of thick cream!
