Ingredients
- 2 C flour
- 2 TBL powdered sugar
- 1-1/2 tsp grated lemon rind
- 1 TBL poppy seeds
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 C low fat buttermilk
- 1/2 C honey
- 3 TBL butter, melted
- 1 LG egg, lightly beaten
- cooking spray
- 2 TBL powdered sugar
- 2 TBL honey
- 2 tsp fresh lemon juice

Preparation
Step 1
preheat oven to 375
lightly spoon flour into dry measuring cups & level w/ knife
combine flour & next 6 ingredients (flour through salt) in lg. bowl
make well in caenter of mixture
combine buttermilk, 1/2 C honey, butter & egg
stir well w/ whisk
add flour mixture
stirring just until moist
spoon batter into 12 muffin cups coated w/ cooking spray
bake @ 375 for 29 min or until muffins spring back when touched lightly in center
combine 2 TBL powdered sugar, 2 TBL honey & lemon juice in sm. bowl
brush glaze over tops of muffins
place on wire rack
