Maple Glazed Salmon Roasted on a Cedar Plank

Ingredients
- 4 4-oz filets of wild salmon, boned & skinned
- 1 C pure maple syrup
- 3 TBL dijon mustard
- 3 TBL japanese soy sauce (low sodium)
- 2 cloves garlic - minced
- 1 tsp chili sauce
- 2 lg untreated cedar shingles, rinsed w/ water
- olive oil spray

Preparation
Step 1
combine maple syrup, soy sauce, mustard, garlic & chili sauce
brush salmon filets to marinate for at least one hour
preheat oven to 375 for at least 20 min
place both planks in oven for abt 8 min to cure wood & dry out
they may start to smoke a little - this is OK
remove planks w/ oven mitts
spray smooth side w/ little olive oil on both hot planks
place 2 filets on each plank right in center not letting filets touch each other
return planks w/ salmon to oven
continue baking for abt 10 min
brush more of glaze on filets
return them to oven for another 10 min
