Ingredients

  • 2 cups plus 2 tbsp flour
  • 3/4 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2.5 stick butter, room temp
  • 2 cups sugar
  • 3 eggs
  • 2.5 tsp vanilla
  • 8 oz cream cheese, room temp
  • 2/3 cup powdered sugar
  • nonstick spray

Preparation

Step 1

Coat a 9x13 inch dish with cooking spray. Line with parchment, leaving an overhang. Spray parchment.
Sift together flour, cocoa, baking soda, and salt in large bowl. Beat butter and sugar in a mixer until fluffy. Add 2 eggs and 2 tsp vanilla, mix well. Add flour mixture, beat well. Preheat oven to 325. Remove 1 cup of dough, cover and refrigerate. Press rest of dough onto bottom of dish. Chill 30 minutes. Bake until base is set and edges are golden 25 minutes. Let cool completely.
Mix cream cheese, powdered sugar and one egg and 1/2 tsp vanilla in a medium bowl. Spread over cooled base. Pipe rest of dough on top in a lattice pattern. Bake until filling is set, 25-30 minutes. Let cool completely, remove from pan and cut into 20 bars.
