Ingredients
- 2 TBL honey
- 2 TBL dijon mustard
- 1/2 C peanuts
- 1 C panko
- 4 (1/2" thick) chicken breast cutlets (abt 1LB)
- cooking spray
- 1/4 C peach chutney

Preparation
Step 1
prehat oven to 500
combine honey & mustard in sm. bowl
stir well
place peanuts in food processor
pulse until finely chopped
combine peanuts & panko in shallow bowl
brush each cutlet w/ honey mixture
dredge cutlets in panko mixture
place cutlets on baking sheet coated w/ cooking spray
lightly coat cutlets w/ cooking spray
bake for 8 min or until done
serve w/ chutney
