Ingredients

  • 1/2 C pecan or walnut oil
  • 2/3 C whole milk
  • 1 lg egg
  • 1 lg egg yolk
  • 1/4 tsp vanilla extract
  • 1-1/2 C flour
  • 1/2 C sugar
  • 1-1/2 tsp baking powder
  • 3/4 tsp salt
  • 1 C coarsely chopped pecans or walnuts (1/4 LB) toasted

Preparation

Step 1

whisk together oil, milk, egg, yolk & vanilla in lg bowl

whisk together flour, sugar, baking powder & salt in another bowl

whisk into milk mixture until just combined
stir in nuts

fill butter muffin cups half full with batter

bake until golden & wooden pick comes out clean 10-25 min.

cool in pan on rack - 15 min
