Poultry Casserole
From Pressure Cooking the Easy Way
Author Notes...Here is a basic recipe for creating poultry casseroles. Add your family’s favorite vegetables and grains. This is always a good recipe for a potluck.

Ingredients
- 2 chicken legs, skinned
- 1 chicken breast, skinned and cut in half
- 2 chicken thighs, skinned
- 1 cup boiler onions
- 1 cup chicken broth
- 1 cup dry white wine
- 3 carrots, cut into 2” pieces
- 2 cups small red potatoes, cut in half
- 1/2 tsp. pepper
- 1 bay leaf
- Salt to taste
- 2 T. arrowroot dissolved in 2 T. water

Preparation
Step 1
Coat pan with nonstick spray and brown chicken parts with onions. Add all remaining ingredients, except arrowroot mixture, and bring to high pressure. Cook for 10 minutes and let pressure fall on its own. Open cooker, add arrowroot mixture, and cook until casserole reaches desired thickness.
Variations
Ginger Chicken
Substitute: 8 chicken thighs, skinless and boneless for combination parts
Substitute: ½ cup dry sherry for white wine
Substitute: 1 cup chopped yellow onion for boiler onions
Substitute: 2 large sweet potatoes, cut into 2” slices for red potatoes
Increase: Chicken broth to 1 ½ cups
Add: 1 T. minced ginger root, 2 tsp. minced garlic (about 4 cloves), ¼ cup soy sauce and 1 T. sesame seeds for garnish
Creamed Turkey Casserole
Substitute: 1 large half turkey breast, boneless, skinless, cut into 1” pieces, for chicken
Substitute: 1 cup dry red wine for white wine
Substitute: 2 large carrots, sliced, for carrot pieces
Substitute: 2 large potatoes, cut into ¾” slices, for red potatoes
Add: 1 medium zucchini, cut into ¾” slices
Add: 1/3 cup yogurt (stir in after arrowroot has been added)
