  • 1 cup flour
  • pie crust
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 6 tbsp cold butter, cut into pieces
  • 1 cup boiling water
  • 1/2 cup molasses
  • 1/2 cup corn syrup
  • 1 tsp baking soda
  • 1 egg, beaten

Step 1

Roll out pie dough to 1/8 inch thick. Fit into 9 inch pie plate, leaving 1 inch overhang. Fold edges under and crimp. Chill 30 minutes.
Preheat oven to 325. Whisk together flour, brown sugar, cinnamon, nutmeg and salt. Add butter, rub mixture together with hands until crumbly.
Stir together boiling water, molasses and corn syrup in another bowl. Whisk in baking soda, egg, and pinch of salt. Pour into pie shell. Scatter crumb topping over filling. Place pie on rimmed baking sheet. Bake until filling is set and topping is golden, 45-50 minutes. Let cool 30 minutes, serve warm.
