Ingredients

  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup unsalted butter, softened
  • 2 teaspoons vanilla
  • 2 eggs
  • 2 1/2 cups flour
  • 1/3 cup cocoa
  • 1 teaspoon baking soda
  • 9 ounce package of Rolo candies (peppermint patties or Reeses Peanut Butter Cups are also good)

Step 1

Preheat oven to 375 degrees F. In a large mixing bowl, cream white sugar, brown sugar, and butter until light and fluffy. Add vanilla and eggs and beat well. In a medium bowl, sift together flour, cocoa, and baking soda. Slowly add dry ingredients to wet ingredients and mix until just incorporated. Shape about 1 tablespoon of dough around one Rolo candy, covering completely. Roll in sugar and place 2 inches apart on a baking sheet. Bake for 7-12 minutes.
