Balsamic-Citrus Salmon

Serve this salmon over a bed of fresh spinach. Garnish w/tomato wedges & drizzle w/any remaining marinade.

Ingredients

  • 4 salmon steaks or fillets
  • 1/2 c balsamic vinegar
  • 1/2 c orange juice concentrate
  • 1/4 c lemon juice
  • 1 T Dijon mustard
  • 1/2 c EVOO

Preparation

Step 1

1. Place salmon in a dish.
2. Whisk together vinegar, orange juice, lemon juice, & mustard in a med bowl.
3. Slowly add oil in a thin, steady stream while continuing to whisk.
4. Pour marinade over salmon.
5. Refrigerate for 1-2 hours.
6. remove salmon from marinade & then pour marinade into a small pot & boil to reduce by half.
7. Preheat grill.
8. Place salmon on hot grill.
9. Grill for 4 minutes, flip, baste w/reduced marinade & grill 4-5 minutes longer, until salmon is cooked through.
10. Cover w/aluminum foil to help it cook completely if needed.
11. Baste w/remaining marinade & serve.
