Ingredients
- 3-4 lbs Potatoes
- 1/2 cup sugar
- 1/2 to 3/4 cups White Vinegar (or apple cider vinegar)
- 1 cup cold water
- 1 tbs salt
- Pepper to taste
- 1 large onion grated
- 1/4 cup oil
- Mayonnaise as needed

Preparation
Step 1
Boil potatoes with skins on until fork tender.
Let potatoes cool until you can handle them. Remove skins from potatoes. Let potatoes cool completely.
Slice potatoes and put in large bowl.
Mix all other ingredients except mayo and pour over potatoes.
Refrigerate potatoes overnight mixing a few times.
Drain extra juice off potatoes. Reserve juice. Mix potatoes with mayo a little at a time until potatoes are covered. Add some reserved juice if too dry.
