Coffee Cake for One

Ingredients

• Batter:
• 3 tablespoons flour
• 1/4 teaspoon baking powder
• 1/16 teaspoon salt
• 1 tablespoon sugar
• 5 teaspoons water
• 2 teaspoons oil (or applesauce)
• 1/4 teaspoon vanilla
• Streusel:
• 1/8 teaspoon cinnamon
• 1 1/4 teaspoon brown sugar
• 1/2 teaspoon oil (or applesauce)
• tiny, tiny pinch salt
• 2 pecan halves

Preparation

Step 1

Combine batter dry ingredients and mix well. Add wet and mix until just mixed. In a tiny bowl, combine all streusel ingredients. Fill a greased mug halfway with the batter. Sprinkle 2/3 of the streusel, then spoon the remaining batter on top. Finally, sprinkle on the rest of the streusel. Cook 1 minute in the microwave.
