Ingredients
- PASTE
- 1/2 cup chopped scallions
- 2 walnut sized chunks of ginger
- 1/2 to 1 Tbsp Asian chili-garlic paste
- 3 Tbsp lime juice
- 1 Tbsp fish sauce
- 5 to 6 lbs bone-in beef short ribs cut between the ribs
- SHORT RIB MOP
- 3 Tbsp soy sauce
- 2 Tbsp rice vinegar
- 2 Tbsp vegetable oil

Preparation
Step 1
Combine paste ingredients in a blender and purée. Apply the paste evenly to the ribs, reserving 1 Tbsp for basting. Refrigerate overnight. Let them stand for 30 minutes when you take out of the fridge.
BBQ ribs.
MOP
Combine the reserved seasoning paste, soy sauce, vinegar, and oil with 1 cup water in a mall saucepan over low heat.
Use to baste the ribs while barbecuing.
