tomatoless meat sauce

• 2 tablespoons unsalted butter (bacon fat will work too, just reduce the salt slightly)
• 2 tablespoons extra virgin olive oil
• 2 cups carrots, peeled and diced
• 2 cups beets, peeled and diced
• 1 cup yellow onion, peeled and diced
• 1 celery stalk, chopped
• 5 garlic cloves, minced
• 3 pieces of bacon, chopped
• 2 1/2 teaspoons sea salt
• 1/4 teaspoon fresh cracked pepper
• 3/4 cup dry red wine
• 1 cup chicken stock
• 2 bay leaves
• 1 tablespoon fresh basil, chopped
• 1 1/2 teaspoon dried oregano
• 1/2 teaspoon dried thyme
• 1 tablespoon apple cider vinegar
• 1 pound ground beef, veal, or pork
