Ingredients
- 2 pkgs yeast
- 2 cups warm water
- 1/2 cup canola oil
- 4 tsp salt
- 1 T sugar
- 5 1/2 cups flour

Step 1
Mix yeast with warm water. Add oil, salt, sugar, and flour to yeast/water mixture. Knead until smooth (about 5 min. in stand mixer). Roll out about 3/4 inch. Cut in rounds. Sprinkle cornmeal lightly on cookie sheet. Place muffins on cornmeal; sprinkle tops with cornmeal, as well. Let rise 30-45 min. (until about 1 inch high) Be careful moving from cookie sheet to griddle - Gently place in dry electric skillet (or pancake griddle set to 350) and brown on both sides. (About 5 min. per side) Fork split. Butter and freeze. Place under broiler until lightly browned and serve.
