Sweet Potato Pie

Ingredients

• 2 + cups mashed sweet potatoes (baked & peeled) (4 medium potatoes)
• 3/4 cup evaporated milk
• 3/4 cup firmly packed brown sugar
• 1/4 cup white sugar
• 2 large eggs
• 3 Tbsp butter (stir into potatoes while hot)
• 1/4 tsp salt
• 1/4 tsp ground nutmeg
• 1/4 tsp ground cinnamon

Preparation

Step 1

Beat all ingredients with electric mixer; blend util smooth. Pour into unbaked deep dish pie crust. Place pie crust on cookie sheet first then fill. Bake for 10 minutes on 400 degrees, then turn oven down to 350 degrees for 35 minutes or until done. Insert knife in center, comes out clean when done.
