Ingredients

  • Rosemary Lime Marinade:
  • 1 lb wild salmon fillet, cut into 1" cubes
  • 1 zucchini, cut into 1/2" pieces
  • 1 lg red onion, cut into 1/2" pieces
  • 10-12 cherry tomatoes
  • wooden or bamboo skewers, soaked in water 10 minutes
  • 2 garlic cloves, pressed or finely minced
  • 1 T (~ 2 small sprigs) fresh rosemary leaves, finely chopped
  • 1/3 c EVOO
  • 3 T fresh squeezed lime juice

Preparation

Step 1

1. Place fish & vegetable pieces in a shallow baking dish & sprinkle w/salt & pepper.
2. Whisk together marinade ingredients in a small bowl until blended.
3. Add marinade to the baking dish, toss & allow to marinate 15-30 minutes.
4. Reserve marinade.
5. Preheat the broiler.
6. Skewer the salmon & vegetables, alternating on skewers & broil 5-7 minutes, turning once.
7. While cooking, boil the marinade in a small saucepan for 5 minutes.
8. Drizzle over cooked skewers & serve.
