Blueberry & Yogurt Ice Pops 1 Picture

Ingredients

  • 2 Cups blueberries
  • 7 Tablespoons water
  • 1/4 Cup plus 2 tablespoons granulated sugar
  • Generous 2 cups Greek yogurt
  • 8 Tablespoons honey
  • 3 Tablespoons freshly squeezed lemon juice

Directions

Put the blueberries, 5 tablespoons water and sugar in a saucepan and bring to a simmer. Simmer over a low heat for 3–5 minutes until the blueberries burst. Remove the pan from the heat and set aside.

Mix together the yogurt, honey, lemon juice and the 2 tablespoons water in a bowl.

Spoon alternate layers of the yogurt and blueberry mixtures into each ice pop mold, leaving ¼-inch  at the top to allow the mixture to expand when it freezes. Insert the ice pop sticks and freeze.
