Mom’s Eggplant Pizza

Ingredients

  • 1 jar pizza sauce
  • 1 (12-14”) Boboli pre-cooked pizza crust
  • 1 small eggplant
  • Kosher salt
  • 1 sweet onion
  • Fresh basil leaves
  • 4 cloves fresh garlic, minced
  • Shredded four cheese Italian Blend
  • Fontina Cheese, shredded
  • Olive oil

Preparation

Step 1

Preheat oven to 425 degrees. Slice eggplant into ¼” thick slices. Lay in a single layer on an olive oil coated cookie sheet. Spray lightly with olive oil then sprinkle lightly with kosher salt. Bake for 15-20 minutes, turning half way through, until golden.

Slice onions into srips. Saute over medium-high heat in olive oil with minced garlic, until carmelized.

Assemble pizza: sauce over crust, eggplant, torn basil leaves, carmelized onions, cheeses. Bake at 425 degrees for 10-12 minutes until cheese bubbly.
