  • 2 tbsp butter
  • 1/2 cup finely chopped onion
  • 1 clove garlic, minced
  • 3/4 tsp ground cumin
  • 16 oz diced tomatoes
  • 1 (7oz) can Macayo’s diced green chiles
  • 8 oz grated Jack cheese
  • 3 oz cream cheese, cut into small cubes
  • 1/4 cup milk
  • Salt and freshly ground black pepper, to taste
  • Tortilla chips

Step 1

Melt butter in a medium saucepan. Add onion, garlic, cumin and saute’ for 3 minutes or until onion softens. Add diced tomato and diced green chiles and cook for another 5 minutes or until tomatoes have softened and some of the liquid has evaporated. Remove pan from heat and stir in Jack cheese and cream cheese, stirring until cheeses melt. Add milk until desired consistency is reached. Adjust seasoning. Serve warm with tortilla chips.
