Ingredients
- 1 C panko crumbs
- 1/2 stick unsalted butter, melted
- 5 T parmesan, shredded, divided
- black pepper to taste
- 1/2 C dry white wine
- 1/4 C shallots, minced
- 6 oz cream cheese, cubed
- 1 C boursin cheese, crumbled
- 1 egg
- 1/2 C red grapes, chopped
- 1 tsp fresh lime juice
- 1 tsp mince

Preparation
Step 1
preheat oven to 325
coat 2 min-muffin pans w/ nonstick spray
COMBINE panko, butter, 2 T parmesan & pepper in bowl
spoon 2 tsp panko mix, into each muffin cup
press down w/ back of tBL measure
bake 10 min
BOIL wine w/ shallots in sm. sauce pan over high heat until liquid is nearly evaporated
reduce heat to low
whisk in cream cheese until melted
stir in boursin & remaining parmesan until smooth
whisk in egg
spoon 1 TBL cheese mix onto each muffin cup
bake 15 min or until set in center
cool 5 min before removing
TOSS grapes, lime juice & parsley together in sm. bowl
top cheese-cakes w/ relish before serving
