VINAIGRETTE****Thai Sweet Chili Dressing

06/06/15 - Made for Sweet Chili Chicken Salad. VG. It should go well with other salads as well or even as a dip for shrimp or chicken or a marinade/basting sauce for salmon [poured over block cream cheese and served with nacho chips for dipping].

Ingredients
- 1/4 cup sweet chili sauce (I used half sweet and half hot - VH brand [if using another brand, watch the heat])
- 2 tablespoons rice vinegar
- 2 tablespoons lite canned coconut milk
- 1/2 tablespoon Splenda brown
- 1 garlic clove, pressed or finely minced
- 1/2 tablespoon creamy peanut butter
- 1/2 teaspoon ginger
- 1 tablespoon lime juice, plus zest
- 1 teaspoon fish sauce
- salt and pepper to taste, if needed

Step 1
Combine everything in a small saucepan and bring to a boil over medium heat. Simmer for 4 - 5 minutes until thickened slightly, stirring as needed. Remove from heat and allow to cool completely then jar and refrigerate.
