Ingredients

  • 1/2 cup water, heated to no hotter than 115ºF
  • 1 Tablespoon honey or sugar
  • 2 teaspoons instant yeast
  • 1 cup white rice flour (or brown rice)
  • 3/4 cup potato starch (or cornstarch)
  • 1/2 cup millet flour
  • 2 teaspoons xanthan gum (or guar gum for completely corn-free)
  • 3/4 teaspoon salt
  • 1/2 teaspoon gluten free baking powder (Rumford's or Featherweight)
  • 2 large eggs, at room temperature, beaten (or gluten-free egg replacer)
  • 1/2 cup buttermilk (or dairy-free substitute*)
  • 1/4 cup extra virgin oil

Preparation

Step 1

Oil a non-stick, 12-cavity dessert bar pan, and set it aside.
Add honey or sugar and yeast to the warm water, stir, and allow the mixture to rest for about 5 minutes or until about 1/2-inch of foam forms on the top (more foam is okay, too).
In a medium-sized bowl, add white rice flour, potato starch, xanthan gum, baking powder and salt, and whisk thoroughly.
In a separate bowl, whisk together buttermilk, oil, beaten eggs, and yeast mixture; and pour into the dry mixture and stir until smooth.
Cover and set aside to rise for about 45 minutes.
Distribute the dough evenly between the cavities in the pan, filling about halfway up the sides.
Sprinkle the tops with water and smooth out the tops.
Set in a warm (80ºF) environment to rise for about 15 minutes.
Preheat the oven to 475ºF while the buns continue to rise.
Oil the tops of the dough.
Bake on the center rack in the oven for about 12 minutes and golden brown.
Remove the pan from the oven, and allow it to rest for about 3 minutes.
Serve the buns while they are still warm or transfer to a wire rack to cool. You can also baste the insides of sliced buns and toast them on the grill or in the same skillet you fried the burgers.
To store, once completely cool, freeze leftovers in a single layer, in a gallon-size freezer bags until ready to use. Then defrost them in the microwave on low heat or at room temperature. Reheat by microwaving on a low temperature or slicing in half and toasting.
To Make the Burger Dressing:
Combine all of the ingredients in a small bowl and use to replace other condiments.

*Homemade or Dairy-Free Buttermilk: 1 1/2 teaspoons apple cider vinegar + enough milk of choice to make 1/4 cup, (rice milk for dairy-free/vegan)
