Ingredients

  • 1 1/2 Cups Sugar
  • 1/3 Cup 2 Tbsp Cornstarch
  • 1 1/2 Cups Water
  • 3 Egg Yolks
  • 3 Tbsp Butter
  • 1/2 Lemon Juice
  • 3 Egg Whites
  • 1/4 Tsp Cream Of Tartar
  • 6 Tbsp Sugar
  • 1/2 Tsp Vanilla
  • 1 baked Pie Shell

Preparation

Step 1

Mix sugar and cornstarch. Stir in water gradually. Cook until thick. Boil 1 minute. Stir half of mixture into egg yolks. Blend into rest of mixture. Boil 1 minute. Remove from heat. Add butter and lemon juice. Pour into pie shell. Beat egg whites and tartar until foamy. Beat in sugar gradually until stiff. Add vanilla. Spread on filling and bake until golden brown, about 10 minutes at 350F.
