Fish Fillets with Almond Butter

Ingredients
- 3 eggs
- 2 TBL grated parmesan cheese
- 1 TBL chopped parsley
- 1/2 tsp salt
- 1/4 tsp pepper
- abt. 1/2C flour
- abt 3 TBL olive oil
- 2 1-1/2LBS firm-textured white fish fillets, each 3/4" thick
- 1/2 C butter
- 1/4 C sliced almonds
- 3 TBL lemon juice
- 2 TBL dry white wine

Preparation
Step 1
in rimmed plate or pie pan, beat eggs until well blended
stir in cheese, parsley, S & P
have flour ready on another plate
heate 2 TBL oil in wide frying pan over med heat until oil ripples when pan is tilted
while oil is heating, dredge piece of fish in flour on all sides
shake off excess
drain briefly
place in hot pan
continue coating fish as needed to fill pan
cook until fish is golden brown & tests done
takes 3-5 min. on each side depending on thickness
transfer fish to platter
cover loosely & keep warm
repeat adding oil as needed until all fish are cooked
melt butter in clean pan over med heat
when butter foams, stir in almonds
cook just until begin to brown
turn off heat
stir in lemon juice & wine
spoon sauce over fish
serve immediately
A GOOD RULE OF THUMB FOR PAN-FRYING OR POACHING FISH IS TO ALLOW 8-10 MIN OF COOKING FOR INCH OF THICKNESS
