FABRIZIOS SALAD DRESSING

Ingredients

• 1 pt olive oil
• 6 oz red wine vinegar
• 1/2 tsp dried oregano
• 1/3 tsp dried basil
• 2/3 TBL minced garlic
• S & P
• 2 egg yolks
• 1/4 tsp tabasco
• 1/3 tsp worcestershire
• fresh grated parmesan

Preparation

Step 1

mix first 4 ingredients
let stand overnight

strain
add garlic, S & P
add egg yolks, whisking in one at a time till dressing is rich & creamy
add tabasco & worcestershire
keep refrigerated

when tossing salad w/ dressing, add parmesan

serve on romaine lettuce w/ sliced mushrooms & shrimp
top w/ avocado slices
