  • 1/4 cup olive oil
  • 2 Tbsp. coarsely chopped garlic
  • 2 pounds fresh spinach, stems removed
  • Salt and freshly ground black pepper
  • 1 lemon, halved

Preparation

Step 1

In a large saute pan, heat the olive oil over medium-high heat. When the oil is hot, add the garlic and cook it, stirring, for about 1 minute or until it is golden brown. Take care not to let the garlic burn.
Add the spinach and, using a large fork to toss it in oil, saute it for 2 to 3 minutes or until it starts to wilt. Cover the pan and cook it for 30 seconds. Remove the cover, stir the spinach and season it to taste with salt and pepper. Stir it again. Transfer the spinach to a large bowl and serve it with the lemon halves as a garnish.
