Ingredients

  • 3 seedless cucumbers, peeled and diced into small pieces
  • 2 bunched cilantro, roughly chopped
  • 1 bunched Itallian parsley, roughly chopped
  • Zest from 3 limes
  • Juice from 5 limes
  • 2 T lemon juice
  • 3 t salt
  • 1/2 t ground cumin
  • 1/2 t ground coriander
  • 2 t cracked black pepper
  • 1/4 cup olive oil

Preparation

Step 1

Place cucumbers in a blender and puree until smooth. Add cilantro and parsley, and continue to puree until smooth.

Add remaining ingredients and blend until smooth. Place in a covered container and refrigerate.

Can add to mayo. for sandwiches.
