Ingredients

  • 1 (6 ounce) can tomato paste
  • 1/2 cup apple cider vinegar
  • 1/4 cup liquid aminos
  • Liquid Smoke – optional
  • 1 can stevia sweetened soda – I prefer a “Dr. Pepper” knock off flavor
  • 3-4 packets stevia sweetener, or a “doonk” or two of the Trim Healthy Mama Pure Stevia, or a teaspoon of Trim Healthy Mama Sweet Blend
  • 2 tablespoons onion powder
  • 1 tablespoon paprika
  • 2 teaspoons ground mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • Additional salt as needed – give it a taste first!
  • —–> and it sort of goes without saying you’ll need a pork roast or some other meat

Preparation

Step 1

1. In a large bowl, mix together tomato paste, apple cider vinegar, and liquid aminos.
2. Then add seasonings and mix well.
3. Next, if you'd like, add about 1/2 the bottle of liquid smoke.
4. Mix well, then add 1 can stevia sweetened soda. (Whatever flavor floats your boat will work. I think a Dr. Pepper flavor gives it that brown sugar sort of taste. A citrus flavored soda might be nice for a lighter meat like chicken.)
5. Mix well. Then, place a large pork roast into the Crock Pot and pour prepared Sugar Free BBQ sauce over the pork roast.
6. Allow to cook on low for 6-8 hours.
7. Remove any large bones or gristly and fatty pieces if needed - then use a fork to shred the meat while still in the juices.
8. Then use a ladle to remove most of the liquid into a small sauce pot. Bring sauce to a low boil and cook for about 20-30 minutes, stirring occasionally. You’ll reduce the liquid by almost half and it will be slightly thicker. Give it a little taste (careful, it’s hot) and add more sweetener or seasoning if desired. It’s best to taste the liquid after reducing because the flavors are more developed.

If you’d like your sauce to be a little thicker after reducing, you can whisk in 1/2 teaspoon of Glucomannan. Whisk for a full minute, then allow to sit for five minutes, give it a few stirs and you should be good to go. You can spoon this yumminess all over your pulled pork. Store any additional sauce in the fridge for 3 days to a week.
