Ingredients

  • Roasted Red Pepper Cream Cheese Spread:
  • 8 slices double fiber 100% Whole Wheat bread (such as Arnolds)
  • 8 oz deli roasted turkey
  • 1 cup spinach leaves
  • 8 (1/8" thick) slices tomato
  • 1 (7.25 oz) jar roasted red bell peppers, drained and finely chopped
  • 1 ( 8 oz) tub garden vegetable light cream cheese
  • 1 Tbsp minced fresh basil
  • 1/2 tsp minced garlic
  • 1/4 tsp pepper

Preparation

Step 1

1. To make spread: Place pepper on several layers of paper towels and squeeze liquid out until barely moist. Place in a small bowl, add remaining ingredients and stir until blended. Store in frig.

2. To make sandwiches: Spread 1 Tbsp cream cheese spread on each slice of bread.

3. Top each of 4 bread slices with 2 oz turkey, 1/4 cup spinach and 2 slices tomato. Cover with remaining 4 bread slices.
