Biscoff or Speculoos Cookies
Of Dutch origin, these gently caramel and spice cookies are a cross between shortbread and butter cookies. They feature the flavor of Speculoos or Biscoff spread but that product is not in the cookie recipe itself. I use it instead to make these sandwich style cookies. You can find Speculoos (aka cookie spread) spread via Amazon or another version at Trader Joe’s. It spreads like Nutella and tastes like ground up spice cookies. Ingredients
- 1/2 cup unsalted butter, room temperature
- 2 tablespoons white sugar
- 1/3 cup dark brown sugar, firmly packed
- 1 cup all-purpose flour
- 3/8 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 1/2 teaspoon cinnamon
- 3/4 teaspoon ground ginger
- 1/8 teaspoon allspice
- 1/8 teaspoon (less) ground nutmeg
- 1/2 cup slivered almonds, optional
- Finishing Touches
- Speculoos or Biscoff Spread (aka Cookie Spread)
- Confectioners’ sugar

Preparation
Step 1
In a mixer bowl, cream the butter, white and brown sugar until evenly blended. Fold in the flour, salt, baking soda, baking powder, cinnamon, ginger, allspice and nutmeg. Fold in nuts if using. Blend well until dough holds together. Place on a board and shape into a long about 10 inches long, 2 inches wide. With your hands, round or square up the sides (for round or square cookies). Wrap in plastic and chill 20-30 minutes.
Preheat oven to 325 F. Line a large baking sheet with parchment paper.
Slice the log into ¼ inch slices and place on baking sheet. Bake until cookies seem set, 12-14 minutes. Cool 20 minutes in the pan before removing. Dust with confectioners’ sugar and/or spread Speculoos or Biscoff spread between two cookies to make a sandwich cookie.
Makes 12-18 singles cookies or 9 sandwich cookies
