Ingredients

  • Frosting:
  • 1 box (18.2 oz.) brownie mix
  • 1/3 c. vegetable oil
  • 1/4 c. water
  • 1 egg
  • 4 oz. (1/2 block) cream cheese, room temperature
  • 1/4 c. butter, room temperature (1/2 stick)
  • 1 tsp. vanilla
  • 1/4 c. unsweetened cocoa powder
  • 2 c. powdered sugar
  • Chocolate Dipped Strawberries:
  • 24 fresh strawberries (with stem), medium size
  • 1 c. semi-sweet chocolate chips, melted

For strawberries: Rinse berries and pat dry with paper towels. On a baking sheet or flat surface, lay out a sheet of waxed paper. In a medium bowl, melt the chocolate chips at medium heat in microwave in 30 second increments. Stir, and repeat until chocolate is melted and smooth. Dip ¾ of the berry into the chocolate, and lay gently on the waxed paper. Let chocolate set and harden at room temperature or in the refrigerator.
For Brownies: Preheat oven to 350 degrees. In a mixing bowl combine the brownie mix, oil, water and egg and stir until completely combined. Line a mini muffin tin with mini liners, and divide the batter into the cups. Using a cookie scoop is very useful for scooping the batter into the cups. Bake at 350 for 19-21 minutes. Let brownies cool.
For Frosting: With a hand or stand mixer, beat butter and cream cheese. Add the vanilla. Scrape down sides of bowl, and gradually add the sugar and cocoa powder, stopping to scrape down sides of bowl. Frosting will be thick.
Decorating the brownies: Using a piping bag and tip, frost the brownies with a generous amount of frosting, and then top with a cooled chocolate covered strawberry. Enjoy!
