Ingredients

  • 1 cup uncooked basmati rice
  • 1 cup frozen corn kernels, thawed
  • 1-15 oz can black beans, drained and rinsed
  • 1-16 oz jar salsa
  • 1 cup chicken broth
  • 11/2 tsp chili powder
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 large chicken breast (11/2 lbs)
  • 1 cup shredded cheese
  • 2 green onions sliced

Preparation

Step 1

Preheat oven to 375 degrees
In an 8x8 inch pan, add the rice, beans, corn, salsa, chicken broth, chili powder and oregano. Stir to combine.
Cut the chicken breasts into 3 pieces and submerge into the liquid in the baking dis, as far as possible.
Cover the casserole dish tightly with foil, and bake for 1 hour until the rice is tender and the liquid has been absorbed.
Remove from oven, and sprinkle with cheese. Return to the oven and bake until the cheese is melted.
Top with green onions and serve.
