  • 8 egg whites; beaten
  • 1 cup butter
  • 2 cups sugar
  • 1 cup milk
  • 3 cups Swans Down Cake flour
  • 2 tsp baking powder
  • 1 tsp vanilla
  • Filling
  • 8 egg yolks
  • 1 cup sugar
  • 1/2 cup butter
  • 1 cup seedless raisins (chopped or ground)
  • 1 cup coconut
  • 1 cup chopped pecans
  • 1/2 cup Mogan David grape wine
  • 1 tsp vanilla

Preparation

Step 1

Cake
Makes 4 layers.
Cream butter and sugar until perfectly light. Add milk alternately with flour and baking powder. Fold in egg whites. Bake at 375 degrees.

Filling
Beat egg yolks well. Add sugar and butter. Cook in double boiler until thick; stirring constantly. After removing from stove and while hot, add raisins coconut and nuts. Spread thick between layers, on top and sides. Option: can sprinkle coconut on top.
